Ingredients
- 1 medium-sized chicken
 - 1/2 kg long-grain rice
 - 1 tbsp Biryani spice mix
 - 2 grams saffron threads
 - 1 medium-sized onion, finely chopped
 - 1/2 cup finely chopped carrots
 - 1/4 cup raisins
 - Crushed garlic cloves
 - Salt to taste
 - Ghee or oil as desired
 - Almonds and pine nuts for garnish
 - Chicken broth for cooking the rice
 
Preparation method
Step 1
Clean the chicken and boil it as usual, reserving the water for cooking the rice. Fry the garlic and onions until they become translucent in a pot over medium heat. Add the rice, salt, Biryani spice mix, raisins, and a sufficient amount of broth to cook the rice.
Step 2
Cook the rice as usual. Meanwhile, coat the chicken with ghee or oil and roast it in the oven. Soak the saffron in half a cup of rose water until fully dissolved.
Step 3
When the rice is cooked and the chicken is roasted, take about 3 tablespoons of cooked rice, mix it with saffron-infused rose water after straining it from saffron, and spread it over the rice.
Step 4
Serve with roasted chicken, fried onions, fried hearts, and red sauce according to preference.
